  • 3 boneless, skinless chicken breasts (cut into chunks)
  • 23 medium zucchini (sliced)
  • 23 medium yellow squash (sliced)
  • 12 oz white button mushrooms (quartered)
  • 3 tbsp minced garlic
  • 1/3 cup olive oil
  • 1/4 cup soy sauce
  • 1 1/2 tbsp rice apple vinegar
  • 1 tbsp sesame oil
  • Salt & pepper (to taste)

Instructions

  1. In a large mixing bowl, combine chicken chunks, sliced zucchini, yellow squash, quartered mushrooms, minced garlic, olive oil, soy sauce, rice vinegar, sesame oil, salt, and pepper. Mix until everything is well-coated.
  2. Preheat your air fryer to 375°F (190°C).
  3. Place the mixture in the air fryer basket in an even layer and drizzle with any remaining olive oil.
  4. Cook for about 15 minutes or until the chicken is cooked through and vegetables are tender.
