- 3 boneless, skinless chicken breasts (cut into chunks)
- 2–3 medium zucchini (sliced)
- 2–3 medium yellow squash (sliced)
- 12 oz white button mushrooms (quartered)
- 3 tbsp minced garlic
- 1/3 cup olive oil
- 1/4 cup soy sauce
- 1 1/2 tbsp rice apple vinegar
- 1 tbsp sesame oil
- Salt & pepper (to taste)
- In a large mixing bowl, combine chicken chunks, sliced zucchini, yellow squash, quartered mushrooms, minced garlic, olive oil, soy sauce, rice vinegar, sesame oil, salt, and pepper. Mix until everything is well-coated.
- Preheat your air fryer to 375°F (190°C).
- Place the mixture in the air fryer basket in an even layer and drizzle with any remaining olive oil.
- Cook for about 15 minutes or until the chicken is cooked through and vegetables are tender.
