  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Reduce apple cider in a saucepan until it thickens to about half a cup; let cool.
  2. Prepare cheesecake filling by mixing cold cream cheese with sugar and vanilla until smooth; refrigerate.
  3. Cream butter and sugars in a bowl; add egg yolks and vanilla, then mix in dry ingredients until combined.
  4. Preheat oven to 350°F (175°C). Scoop dough onto a lined baking sheet, indent for filling, add cheesecake mixture, then cover with more dough.
  5. Bake for approximately 11 minutes until edges are golden; brush with melted butter and sprinkle with spiced sugar topping.
