  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried herbs (thyme, oregano, basil, rosemary)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Kosher salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray it with non-stick cooking spray.
  2. In a mixing bowl, combine the Parmesan cheese, dried herbs, smoked paprika, garlic powder, salt, and pepper.
  3. Toss the zucchini wedges in olive oil until well-coated. Roll each wedge in the Parmesan herb mixture until completely covered and place on the prepared baking sheet.
