Instructions

  1. Preheat your oven to 225°F (107°C) and line two baking sheets with parchment paper.
  2. Slice the zucchini into 1/8-inch thick rounds using a mandolin or food processor.
  3. Layer the slices in a colander, sprinkling with 1/4 tsp salt between layers; let drain for one hour.
  4. Pat the drained slices dry with tea towels to remove excess moisture.
  5. Arrange the slices on baking sheets, ensuring they do not touch. Lightly spray with avocado oil or brush with liquid oil.
  6. Combine smoked paprika, ground pepper, and remaining salt; sprinkle over zucchini slices.
  7. Bake for 70 to 90 minutes until crisp and golden, rotating sheets halfway through.
