Ingredients

Scale
  • ½ cup softened butter
  • 2 cups granulated sugar
  • 3 large eggs
  • 3 medium ripe bananas
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ cup softened cream cheese
  • 2 ¼ cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 15 x 10 x 1 inch baking pan by spraying it with non-stick spray.
  2. In a stand mixer, cream the softened butter and granulated sugar together until light and fluffy. Add eggs one at a time, followed by the mashed ripe bananas and vanilla extract; mix until well combined.
  3. In another bowl, whisk together the flour, baking soda, and a pinch of salt. Gradually add this dry mixture to the wet mixture, mixing just until fully incorporated.
  4. Pour the batter into the prepared pan and spread evenly. Bake for about 25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan.
  5. To make the frosting, beat together softened butter and cream cheese until smooth. Gradually add powdered sugar and vanilla extract; mix until creamy.
  6. Once cooled, frost the banana bars evenly with cream cheese frosting and cut into squares for serving.
