  • 1 tsp turmeric
  • 1 tsp cayenne pepper (optional)
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • Salt and black pepper to taste
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 (6 oz) can tomato paste
  • 1 cup beef broth

Instructions

  1. Prepare all ingredients by chopping the onion, mincing the garlic, grating the ginger, and cutting the beef into chunks.
  2. In a large pot or Dutch oven, heat oil over medium heat and sauté the onion until translucent. Add garlic and ginger, cooking until fragrant.
  3. Increase heat to medium-high and add beef chunks, browning on all sides for about 5–7 minutes.
  4. Sprinkle in curry powder, cumin, turmeric, cayenne pepper (if using), smoked paprika, ground coriander, salt, and black pepper; stir well to coat the meat evenly.
  5. Pour in coconut milk, tomato paste, and beef broth; stir until combined.
  6. Bring to a boil before reducing heat to low. Cover and let simmer for about 2 hours or until beef is tender.
