  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth. Set aside.
  2. For the cookie dough, whisk together flour, black cocoa powder, baking powder, and salt; set aside.
  3. In a separate bowl, beat softened butter with light brown sugar and granulated sugar until fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually incorporate the dry ingredients into the wet mixture. Gently fold in additional black cocoa powder.
  5. Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheets, flatten slightly, add cheesecake filling in the center, cover with more dough, and seal edges.
  6. Roll in black cocoa sugar before baking for 10-12 minutes or until edges are firm.
