  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil (plus more for greasing)
  • 1/2 tsp squid ink
  • 1 cup warm water (110 degrees)
  • 4 oz button mushrooms
  • 2 Tbsp butter
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • Fresh thyme leaves
  • Salt and pepper to taste
  • 1 cup jarred pesto sauce
  • Green Pesto Gouda cheese

Instructions

  1. In a mixing bowl, combine bread flour, garlic powder, salt, and active dry yeast. Form a well in the center and add olive oil and warm water.
  2. Stir until combined; knead for about 5-7 minutes until smooth. Mix in squid ink thoroughly.
  3. Grease a bowl with olive oil, place the dough inside, cover with a damp cloth, and let rise in a warm spot for about 1 hour or until doubled.
  4. While the dough rises, heat butter in a skillet over medium heat. Add shallots and garlic; sauté until softened. Add mushrooms, cooking apple juice, thyme, salt, and pepper; cook until tender.
  5. Preheat oven to 475°F (245°C). Divide dough into four portions; roll out each portion into flatbread shapes.
  6. Place flatbreads on parchment-lined baking sheets. Spread pesto over each; top with mushroom mixture and sprinkle with cheese.
  7. Bake for about 10-12 minutes until golden brown.
