  • 6 slices Turkey Bacon (chopped)
  • 4 large eggs
  • ¼ tsp kosher salt
  • ¼ tsp ground pepper
  • 2 tbsp butter
  • 1 medium white onion (diced)
  • 2 cloves garlic (minced)
  • 3 c cold cooked rice
  • 3 tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 c frozen peas and carrots
  • ½ cup frozen corn
  • 4 green onions (sliced)

Instructions

  1. Cook chopped Turkey Bacon in a skillet over medium heat until crispy, then set aside.
  2. In a bowl, beat the eggs with salt and pepper. Pour into the same skillet and scramble until cooked; set aside.
  3. Sauté diced onion in the skillet until translucent, then add minced garlic.
  4. Add cold rice, flatten it in the skillet, and fry undisturbed for a few minutes.
  5. Stir in soy sauce, frozen vegetables, and sesame oil until warmed through.
  6. Mix in the bacon and scrambled eggs before serving.
