  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • Cajun seasoning, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided

Instructions

  1. Boil salted water in a large pot. Add rotini and cook until al dente (9-10 minutes). Reserve ½ cup of pasta water, then drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken for 7-8 minutes until golden brown; add half the garlic in the last minute.
  4. Remove chicken from the skillet; lower heat. Add remaining butter and garlic to sauté until fragrant.
  5. Pour in heavy cream; simmer for 2-3 minutes until thickened.
  6. Stir in mozzarella and Parmesan until melted into a smooth sauce; season to taste.
  7. Combine cooked rotini with sauce; use reserved pasta water if necessary to adjust consistency.
  8. Serve hot, topped with Cajun chicken and fresh parsley.
