Ingredients

Scale
  • 22.5 lbs deboned skin-on chicken thighs
  • 1/2 cup fresh lime juice
  • 1 teaspoon fresh lime zest
  • 1/4 cup olive oil
  • 3 tablespoons fresh cilantro leaves (roughly chopped)
  • 1 jalapeño (chopped finely)
  • 2 teaspoons chipotle chili powder (or more to taste)
  • 5 cloves garlic (minced)
  • 1 1/2 tablespoons honey
  • 2 teaspoons salt (or to taste)
  • lime wedges (for serving)

Instructions

  1. Prepare the Chicken: Remove bones from chicken thighs by making slits along each side of the bone. Rinse and pat dry.
  2. Make the Marinade: In a large bowl, whisk together lime juice, olive oil, cilantro, chipotle chili powder, garlic, and salt. Reserve some marinade for basting.
  3. Marinate: Add chicken thighs to the marinade, ensuring they are evenly coated. Marinate for at least 2 hours (or overnight for best results).
  4. Grill: Preheat the grill on medium-high heat. Brush reserved marinade on top of the chicken and grill until golden brown and cooked through (about 6-8 minutes per side).
  5. Serve immediately with fresh lime wedges.
