  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans or line with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and coconut extracts.
  4. Gradually add dry ingredients alternately with coconut milk until just combined.
  5. Pour batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely before removing from pans.
  6. For the frosting, beat cream cheese with powdered sugar until smooth. Whip heavy cream separately to stiff peaks, then fold into cream cheese mixture along with extracts.
  7. Layer the cakes with frosting in between the layers and on top, pressing shredded coconut onto the sides and top.
  8. Chill for at least one hour before serving.
