Corn Salad is a vibrant and refreshing dish that brings together fresh ingredients for a burst of flavor in every bite. Perfect for summer gatherings, picnics, or as a light side dish, this easy-to-make salad can be prepared in just 12 minutes.

Ingredients

  • 3 tablespoons olive oil (divided)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 1½ cups corn (fresh or thawed frozen corn)
  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • 2 tablespoons Italian dressing (optional)
  • ⅓ cup crumbled feta cheese (optional)

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt for the dressing. Set aside.
  2. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Sauté the corn until tender, about 5-7 minutes. Remove from heat and allow to cool slightly.
  3. In a large mixing bowl, combine the cooked corn with halved cherry tomatoes, chopped cucumber, and minced basil. Refrigerate until ready to serve.
  4. Just before serving, drizzle the dressing over the salad and toss gently to combine.
