  • lbs boneless, skinless chicken breasts
  • 12 oz fettuccine pasta
  • 1½ cups heavy cream
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • Salt and black pepper, to taste

Instructions

  1. Cook fettuccine in salted water until al dente, then drain while reserving ½ cup pasta water.
  2. Toss chicken with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in a skillet with olive oil until browned and cooked through.
  3. In another skillet, melt butter and combine with cream cheese. Gradually whisk in heavy cream until smooth. Add Parmesan, mozzarella, garlic powder, salt, and pepper to create the Alfredo sauce.
  4. Mix the cooked fettuccine into the sauce, adding reserved pasta water if needed. Top with Cajun chicken bites before serving.
