  • 12 oz rotini pasta
  • 1 cup Velveeta cheese
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 4 cloves garlic, finely minced
  • 1 cup whole milk
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rotini pasta in boiling salted water until al dente (10-11 minutes). Drain and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun spices, then sear until golden brown (6-8 minutes). Remove from pan.
  3. In the same skillet, sauté minced garlic, then add heavy cream, milk, and cream cheese. Whisk until smooth. Stir in Velveeta until melted.
  4. Add cooked rotini to the sauce and combine well. If too thick, add reserved pasta water.
  5. Serve with seared chicken on top, drizzled with extra sauce and garnished with parsley.
