  • 4 slices thick-cut bacon, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • Fresh baby spinach

Instructions

  1. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside.
  2. In the same skillet, add the chicken and cook until golden brown on both sides (about 6-7 minutes per side). Remove and let rest before slicing.
  3. Sauté diced onion in the skillet until translucent (3-4 minutes). Add garlic and cook for another minute.
  4. Mix in Dijon mustard and chicken broth; scrape up browned bits from the pan.
  5. Reduce heat; stir in sour cream and heavy cream. Return sliced chicken to the skillet along with spinach. Cook until spinach wilts (2-3 minutes) and add bacon back before serving.
