  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 3 tablespoons unsalted butter, divided
  • ½ teaspoon red pepper flakes, optional (for heat)
  • 3 cloves garlic, minced
  • 1 tablespoon chopped parsley (for garnish, optional)

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and black pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear the chicken until golden brown and cooked through, about 4-5 minutes per side. Sprinkle with Parmesan during the last minute of cooking.
  3. Cook linguine in a pot of boiling salted water until al dente, reserving ½ cup of pasta water before draining.
  4. In the same skillet, melt the remaining tablespoon of butter, sauté garlic and red pepper flakes, then stir in heavy cream and Velveeta until smooth.
  5. Add mozzarella and Parmesan to the sauce. Mix in cooked linguine until well coated and heated through.
