  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice and zest, dill, mustard, garlic, and salt. Stir well and set aside.
  2. Bring a pot of water to a boil. Add shrimp and cook for 2 to 3 minutes until pink and cooked through.
  3. Prepare an ice water bath. Transfer cooked shrimp using a skimmer to the ice bath for about 3 minutes to cool. Drain and chop into bite-sized pieces.
  4. In the mixing bowl with the dressing, add chopped shrimp, diced cucumber, and green onions. Mix until evenly coated.
