  • 600 g baby potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 450 g chicken breast, cut into cubes
  • 200 g mushrooms, sliced
  • 1 red bell pepper, diced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 200C (400F).
  2. Toss halved baby potatoes with olive oil, garlic powder, oregano, salt, and pepper. Spread on a baking sheet.
  3. Roast potatoes for 20-25 minutes until golden brown.
  4. Heat olive oil in a skillet over medium-high heat. Cook chicken cubes seasoned with salt, pepper, paprika, and Italian herbs until golden.
  5. Add minced garlic, sliced mushrooms, and diced red bell pepper to the skillet; cook for 5-6 minutes until vegetables are tender.
  6. Garnish with fresh parsley and serve hot alongside roasted potatoes.
