  • ½ cup brown sugar
  • ½ cup sour cream or plain yogurt

Instructions

  3. In another bowl, whisk together flour, spices, baking soda, and salt.
  4. Mix brown sugar, sour cream, milk, and egg into the cooled molasses mixture until smooth.
  5. Gradually combine wet and dry ingredients until just mixed; avoid overmixing.
  6. Fill muffin tray to the top with batter and sprinkle with coarse sugar if desired.
  7. Bake for 5 minutes at 425°F; then reduce temperature to 350°F for an additional 11–14 minutes until a toothpick comes out clean.
  8. Cool on a wire rack before glazing.
