  • 1½ cups long grain white rice
  • ½ medium lime (juiced)
  • 1 tablespoon chopped fresh cilantro
  • 1 pinch salt
  • pounds boneless, skinless chicken strips
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • 8 corn tortillas
  • 2 ears sweet corn
  • 1 medium avocado
  • ½ cup salsa
  • ½ cup sour cream
  • 1 medium red bell pepper
  • ½ medium red onion
  • 1 cup grape tomatoes
  • 2 medium jalapenos
  • 1 handful fresh cilantro

Instructions

  1. Rinse 1½ cups of long grain white rice under cold water until clear. Cook according to package instructions using water or broth. Once done, fluff with a fork and mix in juice from ½ lime, chopped cilantro, and a pinch of salt.
  2. In a bowl, combine 2 tablespoons olive oil with 1 teaspoon each of kosher salt, black pepper, chili powder, garlic powder, and oregano. Add 1½ pounds of chicken strips; coat well and let sit for 10 minutes.
  3. Preheat your grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes per side until fully cooked. Let rest before slicing.
  4. While grilling, prepare corn by removing kernels from 2 ears and dice one red bell pepper and half a red onion. Slice grape tomatoes in half and chop jalapenos as desired.
  5. To assemble each bowl: layer cooked rice at the bottom followed by grilled chicken strips, corn kernels, diced vegetables, avocado slices, salsa, sour cream, and fresh cilantro.
