Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, Dijon mustard, minced garlic, oregano, smoked paprika, salt, and black pepper to create the marinade.

  4. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil and seasonings; roast on a baking sheet for about 25–30 minutes until tender.
