  • 4 nectarines, pitted and quartered
  • 8 ounces burrata cheese, torn
  • 8 slices turkey slices
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white apple vinegar
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh oregano, roughly minced
  • 1 tablespoon fresh mint, roughly minced
  • 1 tablespoon fresh lemon thyme leaves
  • 1/2 cup extra virgin olive oil
  • Finishing salt, fresh ground black pepper
  • Grilled baguette, for serving

Instructions

  1. Preheat your grill or grill pan over medium-high heat. Brush the nectarines with olive oil.
  2. Grill nectarine slices for about 2–3 minutes on each side until charred and slightly softened. Remove and let cool.
  3. In a bowl, whisk together lemon juice, apple vinegar, lemon zest, minced herbs, olive oil, salt, and pepper for the vinaigrette.
  4. In a large bowl, combine mixed greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette; toss lightly.
  5. Top with torn burrata and sliced turkey. Sprinkle with herbs and serve with grilled baguette.
