  • 2 salmon fillets
  • 4 cups baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup shredded mozzarella or cheese blend
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper. Spread onto a baking sheet in a single layer and roast for 25-30 minutes until golden brown.
  2. Lay trimmed asparagus on another baking sheet, drizzle with olive oil, season with salt and pepper, top with shredded cheese, and bake for the last 10 minutes alongside the potatoes.
  3. While vegetables are roasting, season salmon fillets with paprika, garlic powder, salt, and pepper. Heat a grill pan over medium-high heat with olive oil and grill each fillet for about 4-5 minutes per side until cooked through.
  4. Plate the grilled salmon alongside roasted garlic potatoes and cheesy asparagus. Garnish as desired.
