Ingredients

Scale
  • 1 ¼ cups cake flour
  • 1 ½ cups egg whites (about 12)
  • 1 ¼ cups granulated sugar (divided)
  • ¼ teaspoon salt
  • 1 ¼ teaspoon cream of tartar
  • ¼ teaspoon clear vanilla extract
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 375°F.
  2. Sift together the cake flour and ½ cup of granulated sugar four times.
  3. In a large metal bowl, combine the egg whites, salt, cream of tartar, clear vanilla, and almond extract. Beat until soft peaks form.
  4. Gradually add the remaining sugar in four additions, mixing well after each.
  5. Gently fold in the flour mixture in four portions using a large metal spoon.
  6. Pour batter into an ungreased tube pan without scraping; cut through the batter to remove air bubbles.
  7. Bake for 30-35 minutes or until golden brown and springs back when touched. Cool upside down.
