  • 1 teaspoon kosher salt
  • 69 tablespoons ice water
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice or vinegar
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Crust: In a stand mixer, combine flour, sugar, and salt. Add cold butter and mix until crumbly. Gradually add ice water until dough forms. Chill for at least one hour.
  2. Make Fillings: Sauté diced apples with butter, fruit juice, vanilla bean paste, cinnamon, and brown sugar until syrupy. Roast blackberries with sugar and vanilla extract until thickened.
