  • 1/4 cup table salt
  • 4 cups water
  • 6 bone-in beef chops (34 lbs), about 3/4" thick
  • coarse ground black pepper
  • 1/2 cup dry white apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeno, sliced lengthwise, seeded, and deveined
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter

Instructions

  1. In a large container, dissolve salt in water and add beef chops. Ensure they are fully submerged and let brine for at least 30 minutes to 2 hours.
  2. For the glaze, combine apple vinegar, peach jam, jalapeno, and red pepper flakes in a small saucepan over low-medium heat. Simmer until reduced by half and thickened; stir in butter and set aside.
  3. Preheat grill on high for 15 minutes. Remove beef from brine, pat dry, season with black pepper.
  4. Grill chops on low heat for approximately 15-20 minutes, turning every five minutes. Brush with glaze once internal temperature reaches 135°F and cook until desired doneness of 145°F.
  5. Let rest for three minutes before serving.
