  • 2 lb beef chuck stew meat
  • 1 medium onion
  • 2 medium carrots
  • 2 cloves garlic
  • 1 lb celery root
  • 6 cups beef bone broth
  • 14.5 oz can diced tomatoes
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 medium bay leaves

Instructions

  1. Season beef with salt and pepper. In a Dutch oven, heat olive oil over medium heat and brown the beef in batches for about 8–10 minutes.
  2. Sauté diced onions and sliced carrots in the same pot for about 10 minutes until softened. Add minced garlic and Italian seasoning; sauté until fragrant.
  3. Return the beef to the pot and add bone broth, diced tomatoes, and bay leaves. Bring to a boil.
  4. Reduce heat to medium-low and simmer covered for 45–60 minutes until beef is tender. Stir in cubed celery root and simmer for an additional 15 minutes.
  5. Remove bay leaves, adjust seasoning if needed, and serve hot.
