Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
  3. In another bowl, combine granulated sugar and lemon zest until it resembles wet sand. Mix in cooled melted butter, then add the egg, egg yolk, and vanilla extract until smooth.
  4. Gently fold in the dry ingredients until just combined. Carefully incorporate the blueberries.
  5. Scoop out dough using a medium cookie scoop onto the prepared sheet about 3 inches apart.
  6. Bake for 10–12 minutes or until edges are lightly golden.
  7. Let cool on the sheet for a few minutes before transferring to a wire rack.
