  • 4 boneless skinless chicken breasts
  • Salt and pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a sauté pan over medium-high heat; cook chicken for 3–4 minutes per side until golden brown. Set aside.
  3. In the same pan, sauté garlic until fragrant. Add chicken broth, lemon juice, and zest; bring to boil. Reduce heat and stir in heavy cream, simmering for about 5 minutes.
  4. Add spinach to the sauce until wilted; return chicken to pan and spoon sauce over it. Sprinkle with Parmesan cheese and cover for another 2 minutes.
  5. Garnish with lemon slices and extra Parmesan before serving.
