  • 4 large russet potatoes
  • 1 pound ground beef
  • ½ cup BBQ sauce
  • ¼ cup chopped onion
  • ¼ cup chopped green bell pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 6 slices turkey bacon, cooked and crumbled
  • ½ cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Wash and pierce potatoes with a fork.
  2. Bake potatoes for 45-60 minutes until tender.
  3. In a skillet over medium heat, brown ground beef, then drain excess grease.
  4. Add chopped onion and green bell pepper; sauté for 2-3 minutes.
  5. Stir in BBQ sauce, garlic powder, onion powder, salt, and pepper; simmer briefly.
  6. Cut baked potatoes in half lengthwise and scoop out some flesh.
  7. Fill each potato half with the beef mixture and top with turkey bacon and cheese.
  8. Return to the oven for 5-7 minutes until cheese melts.
  9. Serve immediately.
