  • 4 cups shredded zucchini
  • 2 large eggs
  • ¼ cup shredded Parmesan cheese
  • ½ cup freshly shredded mozzarella cheese
  • 32 ounces meaty spaghetti sauce
  • 4 ounces turkey pepperoni
  • Green pepper (to taste)
  • Onions (to taste)
  • Mushrooms (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the zucchini by shredding fresh zucchini or draining frozen zucchini.
  3. In a large mixing bowl, combine the shredded zucchini with eggs, Parmesan cheese, mozzarella cheese, salt, minced garlic, and Italian seasoning until well mixed.
  4. Grease a baking dish and spread half of the zucchini mixture as the base.
  5. Layer with half of the spaghetti sauce and sprinkle half of the turkey pepperoni on top.
  6. Repeat the layers with the remaining zucchini mixture, spaghetti sauce, and turkey pepperoni.
  7. Bake covered with foil for 30 minutes; then uncover and bake an additional 10 minutes until golden brown.
  8. Allow to cool slightly before serving.
