  • 1 pound raw extra jumbo shrimp (peeled and deveined)
  • 1/3 cup olive oil
  • 2 large garlic cloves (roughly chopped)
  • 1 teaspoon minced jalapeno
  • 2 teaspoons brown sugar
  • 1 teaspoon smoked paprika
  • Juice of 2 limes (for marinade)
  • Salt and pepper to taste

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a mixing bowl, combine olive oil, garlic, jalapeno, brown sugar, smoked paprika, lime juice, salt, and pepper. Blend until smooth.
  3. Add shrimp to the marinade and stir to coat evenly. Cover and refrigerate for 2–3 hours.
  4. Thread marinated shrimp onto skewers with lime slices in between.
  5. Preheat the grill to medium-high heat.
  6. Grill the shrimp kabobs for about 3–4 minutes per side until opaque and charred.
  7. Serve warm with fresh lime wedges.
