  • 3 tbsp olive oil
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • ½ cup kalamata olives
  • Optional: ⅓ cup feta cheese

Instructions

  1. Marinate the steak by mixing olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak and refrigerate for at least 30 minutes.
  2. Prepare the tzatziki sauce by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Chill until serving.
  3. Cook the marinated steak in a hot skillet for about 4–5 minutes on each side until done to your liking. Let it rest before slicing.
