  • 1 1/2 teaspoons baking powder

  • 2/3 cup white sugar
  • 1 cup chopped fresh peaches (divided)
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • For Topping: 1/4 cup all-purpose flour
  • 3 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 4 tablespoons cold unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In another bowl, mix the milk, egg, vegetable oil, and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined; be careful not to overmix.
  5. Fold in about three-quarters of the chopped peaches.
  6. Spoon the batter into muffin cups two-thirds full and top with remaining peaches.
  7. In a small bowl, mix topping ingredients until crumbly; sprinkle over each muffin.
  8. Bake for about 20 minutes or until golden brown. Cool slightly before serving.
