2 cups granulated sugar
3/4 cup water
1/2 cup liquid glucose/light corn syrup
Few drops black gel food coloring
6 Granny Smith apples (or 12 small apples)
Instructions
Prepare your baking sheet by greasing a piece of baking paper and placing it on a tray to catch drips.
Firmly insert bamboo skewers into each apple and set aside.
In a saucepan, combine sugar, water, corn syrup, and black food coloring. Heat over medium until the sugar dissolves completely.
Allow the mixture to simmer without stirring, using a wet brush to wash down any sugar crystals from the pot's sides.
Cook until reaching hard crack stage at 150ºC (310ºF). Alternatively, drop a bit of caramel into ice-cold water; it should form hard threads when ready.
Dip each apple into the hot caramel, swirling for an even coat before lifting out.
Place coated apples on the prepared baking sheet and allow them to cool completely before serving.
