  • 2 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 3 large carrots, cut into chunks
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 1 cup dry red wine
  • 2 cups beef or veal stock
  • Fresh thyme

  2. Season lamb shanks with salt and pepper; brown on all sides (4-5 minutes) before removing them from the pot.
  3. Sauté onion, garlic, carrots, and celery until softened (5-7 minutes).
  4. Stir in tomato paste and pour in red wine, scraping up brown bits; simmer for 2 minutes.
  5. Return lamb shanks to the pot; add stock and thyme.
  6. Bring to a boil, cover, and reduce heat to low. Simmer for 2–3 hours until tender.
