  • 1 large egg
  • 1/2 cup milk
  • Vegetable oil for frying
  • 1 cup mayonnaise

  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Soak the salt cod in cold water for at least 12 hours, changing the water multiple times. Drain and flake into small pieces.
  2. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Stir in chopped parsley and dill.
  3. In another bowl, whisk the egg with milk and gradually add to dry ingredients until just combined.
  4. Fold in the flaked salt cod gently.
  5. Heat vegetable oil in a skillet over medium-high heat. Drop spoonfuls of batter into the hot oil and fry until golden brown (about 2-3 minutes per side).
  6. Place fried fritters on a wire rack to drain excess oil.
  7. For the aioli, mix mayonnaise, minced garlic, lemon juice, parsley, and lemon zest in a small bowl; season with salt and pepper.
  8. Serve warm fritters with lemon garlic aioli for dipping.
