  • 1 1/2 lbs large shrimp, peeled and deveined
  • 2 Tbsp dry white apple vinegar or chicken broth
  • 4 tsp minced garlic
  • 2 tsp lemon zest
  • Salt and freshly ground black pepper to taste
  • 6 Tbsp butter, diced
  • 1 1/2 Tbsp fresh lemon juice
  • 2 Tbsp chopped fresh parsley
  • 1 lb medium thickness asparagus, trimmed

Instructions

  1. Preheat your grill to medium-high heat (400 – 425°F).
  2. Cut four sheets of heavy-duty aluminum foil (14×12 inches each) and lay them flat.
  3. Divide shrimp among the packs, placing asparagus beside them.
  4. Drizzle each pack with vinegar or broth, sprinkle garlic and lemon zest, and season with salt and pepper.
  5. Add butter pieces evenly on top.
  6. Seal each pack tightly by folding in the sides and crimping edges.
  7. Grill for about 9 – 10 minutes until shrimp is opaque.
  8. Unwrap carefully; drizzle with lemon juice and garnish with parsley before serving.
