- 2 medium zucchini (cubed)
- 1 onion (cut into ¾ inch pieces)
- 1 bell pepper (any color, cut into ¾-inch pieces)
- 4 fully cooked sausages (sliced into circles ¼-inch thick)
- 2 ½ tbsp olive or avocado oil
- 1 tsp garlic (minced)
- ¼ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp onion powder
- ¼ tsp pepper
- ½ tsp salt
- Fresh basil (for garnish – optional)
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
- Add the sliced sausage and sauté until browned. Remove and set aside.
- In the same skillet, add another 1½ tablespoons of olive oil followed by zucchini, onion, and bell pepper.
- Sprinkle with seasonings and stir well; cook until vegetables are tender.
- Return the sausage to the skillet with minced garlic; stir to combine and heat through. Adjust seasoning if needed before serving.
