  • 2 medium zucchini (cubed)
  • 1 onion (cut into ¾ inch pieces)
  • 1 bell pepper (any color, cut into ¾-inch pieces)
  • 4 fully cooked sausages (sliced into circles ¼-inch thick)
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp garlic (minced)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • Fresh basil (for garnish – optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Add the sliced sausage and sauté until browned. Remove and set aside.
  3. In the same skillet, add another 1½ tablespoons of olive oil followed by zucchini, onion, and bell pepper.
  4. Sprinkle with seasonings and stir well; cook until vegetables are tender.
  5. Return the sausage to the skillet with minced garlic; stir to combine and heat through. Adjust seasoning if needed before serving.
