  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 2 small zucchini (cut into thin, half moon slices)
  • salt and black pepper (to taste)
  • 1 small yellow onion (finely diced)
  • 1 pound small button mushrooms (cleaned and patted dry)
  • 3 to 4 cloves garlic (minced)
  • 2 teaspoons fresh chopped herbs (or 1 teaspoon dried herbs such as thyme or oregano)
  • ¼ cup vegetable broth
  • chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and cook for 3-4 minutes until fork-tender. Remove from skillet.
  3. In the same skillet, melt the remaining butter, add diced onion, and sauté for about 2 minutes until softened.
  4. Add cleaned mushrooms and cook for 5-7 minutes until tender and browned.
  5. Stir in minced garlic and fresh herbs; cook for an additional 20 seconds until fragrant.
  6. Return zucchini to the skillet, combine with mushrooms, and heat through for about 1 minute.
  7. Pour in vegetable broth and cook for another 2 minutes to blend flavors.
  8. Adjust seasoning as needed, then serve garnished with fresh parsley.
