  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp chipotle powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup mayonnaise
  • 2 tbsp chipotle peppers in adobo sauce, finely chopped
  • 1 tbsp adobo sauce from the can
  • 1 tbsp lime juice
  • 1/2 tsp honey or maple syrup

Instructions

  1. In a mixing bowl, combine olive oil, chipotle powder, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Add chicken breasts to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Grill chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
  5. While grilling, mix together mayonnaise, chopped chipotle peppers, adobo sauce, lime juice, and honey (or maple syrup) in another bowl to create the dipping sauce.
  6. Allow chicken to rest for a few minutes before slicing and serving with dipping sauce.
