  • 1 medium onion, diced
  • 1 medium red bell pepper, chopped
  • 34 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Pinch of red pepper flakes
  • Salt & black pepper to taste
  • 1 1/2 cups uncooked white rice
  • 1 1/4 cups vegetable broth
  • 1 1/4 cups salsa
  • 1 (15 oz) can kidney beans, drained and rinsed

Instructions

  1. Soak the rice in cold water for at least 10 minutes; drain.
  2. In a large skillet or pot over medium heat, sauté onion and bell pepper in oil for about 3 minutes. Add garlic and spices; cook for another minute.
  3. Stir in soaked rice, salsa, and vegetable broth; bring to a boil.
  4. Cover tightly, reduce heat to low, and simmer for 15–20 minutes without stirring.
  5. After cooking, let sit covered for a few minutes before removing the lid. Stir in kidney beans and adjust seasonings as needed.
