  • 1 tsp chili powder or cayenne
  • Salt & pepper to taste
  • 1 cucumber (sliced)
  • 56 cherry tomatoes (halved)
  • 2 tbsp red onion (chopped)
  • 1 tbsp mint or parsley (chopped)
  • Lemon juice (to taste)
  • 1 cup cooked white rice
  • 1 avocado (sliced)
  • 1 tbsp spicy mayo

Instructions

  1. In a bowl, toss cubed chicken with olive oil, paprika, garlic powder, chili powder, salt, and pepper. Sear in a skillet over medium heat for about 5-6 minutes until fully cooked.
  2. In another bowl, mix sliced cucumber, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper. Chill until ready to serve.
  3. To assemble the bowl, layer cooked rice at the base. Add spinach if desired. Top with grilled chicken cubes, sliced avocado, and cucumber salad. Drizzle spicy mayo on top.
