  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • parsley flakes

Instructions

  1. Preheat your oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Wash the mini potatoes thoroughly. In a bowl, mix cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato and place them in the lemon water to prevent browning.
  4. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, black pepper, and parsley flakes.
  5. Drain the carved potatoes and toss them in the seasoning mixture until well coated.
  6. Arrange the potatoes on the prepared baking sheet with carved sides facing up. Bake for approximately 30 minutes or until golden brown and tender.
