  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2 tablespoons olive oil
  • 1 medium white onion
  • 3 jalapeno peppers
  • 2 serrano peppers (optional)
  • 4 cloves garlic
  • 2 cups beef stock (or dark beer)
  • 2 tablespoons masa harina

Instructions

  1. Toast the dried peppers in a dry pan for 1–2 minutes per side until fragrant.
  2. Remove stems and seeds from the toasted peppers and soak them in hot water for 20 minutes.
  3. Blend the soaked peppers with some soaking water until smooth to create a chili paste.
  4. Season cubed beef with cumin, salt, and pepper, then sear in a large pot until browned.
  5. Sauté chopped onions, jalapenos, serranos, and garlic in the same pot.
  6. Return the beef to the pot along with the chili paste; cook for a few minutes.
  7. Add beef stock and water; bring to a boil then reduce heat and simmer for about 2 hours.
