  • 1/2 cucumber (sliced)
  • 1/3 cup coconut milk
  • 2 teaspoons Massaman curry paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cayenne pepper
  • 1.5 tablespoons minced garlic
  • 2 tablespoons fish sauce
  • 2.5 teaspoons sweet soy sauce
  • 2.5 teaspoons sugar
  • 1/4 teaspoon white pepper
  • 1/2 cup creamy peanut butter
  • 3/4 cup coconut milk (for the sauce)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar or to taste
  • 2 tablespoons ground peanuts
  • salt to taste

Instructions

  1. Marinate the chicken by combining sliced chicken breast, coconut milk, curry paste, turmeric, garlic, fish sauce, sweet soy sauce, sugar, coriander, and cayenne pepper in a bowl. Cover and refrigerate for at least 30 minutes.
  2. For the peanut sauce, whisk together peanut butter, coconut milk, curry paste, apple cider vinegar, sugar, and ground peanuts in a saucepan over low heat until smooth. Remove from heat once it simmers.
  3. Thread marinated chicken onto skewers and grill over medium-high heat for about 4 minutes on each side until cooked through.
  4. Serve hot with fresh cucumber slices and generous amounts of peanut sauce for dipping.
