  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and combine with 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes until fluffy.
  2. While the quinoa cools, prepare the vegetables by dicing the bell pepper and cucumber, shredding the carrots, and slicing the green onions.
  3. In a large mixing bowl, combine cooled quinoa with all prepared vegetables, cilantro, and peanuts.
  4. For the dressing, whisk together soy sauce, lime juice, honey, sesame oil, grated ginger, minced garlic, salt, and pepper in a small bowl.
  5. Pour the dressing over the salad mixture and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
