  • 240ml dairy-free milk
  • 1 tsp apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • Ground Oreo crumbs (for decoration)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. Combine dairy-free milk and apple cider vinegar in a bowl; let it sit for around 5 minutes.
  3. In another bowl, whisk together the self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Pour the milk mixture into the dry ingredients along with sunflower oil; mix gently until just combined.
  5. Spoon the batter into cupcake liners until two-thirds full and bake for about 20 minutes or until a toothpick comes out clean.
  6. For the frosting, beat dairy-free butter until creamy, then gradually add icing sugar and aquafaba until fluffy.
  7. Once cooled, frost each cupcake and decorate with ground Oreo crumbs, white chocolate buttons for eyes, and whole Oreos as wings.
