  • 2 cups shredded zucchini (squeezed)
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • 3 tbsp canola oil (for cooking)

Instructions

  1. Grate the zucchini and squeeze out excess moisture using a mesh bag or cheese cloth.
  2. In a mixing bowl, combine squeezed zucchini with Panko breadcrumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper; mix until well combined.
  3. Preheat a large skillet over medium heat and add canola oil.
  4. Form the mixture into patties using an ice cream scoop and carefully place them in the pan.
  5. Cook each fritter for 4-6 minutes on one side until golden brown, then flip gently and cook for another 4-6 minutes.
